An Intimate Dinner for Two
Spice dusted, marinaded in rosemary, garlic, lemon and white wine, then grilled to perfection over a wood fire grill. This is how we do lemon rosemary chicken breast here. But first lets get started with opening the champagne and sampling the endive with goat cheese, fig, honey pecan and port wine sauce it is drizzled in. When your ready to move to the dining table we will have a jumbo sea scallop, seared in clarified butter, and set atop a spoon of creamy polenta that has been whipped with mascarpone, then topped with an attractive display of radish salad, just enough to give it needed texture, then dotted with balsamic beads and chili pepper pearls. Now, lets take a moment to stretch our legs while chef Todd opens a wine that pairs with the next course. Butternut squash soup, chilled, it is somewhat rich but only because it possesses a smooth velvety consistency delivered from the roasted squash. Of course the creme fraise lends into the richness as well. The buttery richness of the toasted brioche sticks complement the soups flavor, as the texture plays its part in the balance of the dish.
